Chicken Binakol Recipe

Chicken Binakol Recipe Ingredients:

1 coconut (buko)
2 tablespoons minced garlic
3/4 cup sliced white onions
2 tablespoons corn oil
1/2 tablespoon sliced ginger
2 tablespoons fish sauce (patis)
2 whole chicken breasts, deboned and cubed
4 to 5 cups homemade chicken stock
salt and freshly ground pepper to taste
chopped spring onion for garnish

Chicken Binakol Cooking Instructions:

1 Crack open coconut; reserve juice and scrape meat. Set aside.

2 Sauté garlic and onions in corn oil; cook until onions are translucent. Add in ginger and continue cooking until aromatic. Add fish sauce and simmer.

3 Add chicken and continue cooking until meat is lightly browned.

4 Add stock; boil then simmer for 10 minutes.

5 Add coconut juice and meat. Season with salt and pepper. Garnish with spring onion. Serve immediately.

Topping tip: For a tasty topping, add toasted garlic before serving.
