Macaroni salad recipes

We’ll have a family reunion this weekend and i was assigned to prepare macaroni salad. I’ve tried making macaroni salad before but i haven’t perfected the recipe. So i’m thinking of trying different version. I found several recipes online and here are some of them:

Tuna Macaroni Salad

Ingredients

* 16 ounces macaroni
* 2 (6 ounce) cans tuna, drained
* 1 (15 ounce) can peas, drained
* 1 (15 ounce) can carrots, drained
* 1 (1 ounce) package dry Ranch-style dressing mix
* 1 cup mayonnaise
* 1/2 cup milk
* salt and pepper to taste

Directions

1. In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
2. In a large bowl, combine pasta, tuna, peas and carrots.
3. Whisk together the salad dressing mix, mayonnaise and milk. Stir into pasta mixture. Cover and refrigerate until chilled.

Fruity Macaroni Salad

Ingredients

* 4 cups macaroni
* 2 stalks celery, diced
* 1 green bell pepper, diced
* 1 cup sweet corn kernels
* 2 apples – peeled, cored and diced
* 1 large orange, peeled, sectioned, and cut into bite-size pieces
* 1 tablespoon chopped fresh chives
* 1 tablespoon chopped fresh parsley
* salt and pepper to taste
* 3/4 cup mayonnaise

Directions

1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; rinse with cold water.
2. In large bowl combine pasta, celery, pepper, corn, apple, orange, chives, parsley, salt, pepper and mayonnaise. Adjust seasonings. Serve

Barbeque Macaroni Salad

Ingredients

* 1 (12 ounce) package elbow macaroni
* 1 (15 ounce) can marinara sauce
* 1 1/2 cups chopped celery
* 1 cup sweet pickle relish
* 1 (4 ounce) can sliced black olives
* 1 small red onion, chopped
* 1 1/2 cups mayonnaise
* 1 teaspoon chili powder

Directions

1. Bring a large pot of lightly salted water to a boil. Add macaroni, and cook for 8 to 10 minutes or until al dente. Drain, and rinse under cold water. Put macaroni in a serving bowl, and mix in the marinara sauce, celery, relish, olives, onion, mayonnaise and chili powder. Cover and chill for at least 2 hours before serving.

By the way, these three recipes are from allrecipes.com. I’m not yet sure which recipe to try, maybe i’ll ask my kids later which of the three recipes they are interested. How about you would you like to try any of the three recipes?
